Written By Thali Service on Wednesday, 30 August 2017 | August 30, 2017

INGREDIENTS
2 cups poha/flattened rice/beaten rice
2 tbsp oil
1 tsp mustard seeds
1 tbsp peanuts/groundnuts
1 tbsp very finely chopped green chillies
8-10 fresh curry leaves
3 medium size finely chopped onions/kanda
salt - to taste
a pinch of sugar(optional)
½ tsp turmeric powder/haldi
2 tbsp coriander leaves
1 medium size lemon extracted juice

INSTRUCTIONS

Firstly, take a strainer, into it add poha and wash poha twice and set it aside for about 5-10 minutes and let the water drain out completely.
Excess washing and soaking makes the poha soggy therefore, do not do it.
Poha Making:
Take a pan/wok, into it, add oil and heat it.
Add mustard seeds and let them crackle.
Add peanuts and roast for few seconds.
Add finely chopped green chillies and saute.
Add curry leaves into it.
Add chopped onions and saute for few seconds.
Into it, add salt as per taste.
Add few sugar crystals and stir well(optional).
Add turmeric powder and mix well.
Add the washed poha into it.
Mix the poha well with the cooked onion mixture.
Add some freshly chopped coriander leaves into it.
Finally add in some lemon extracted juice all over, mix and cook for few seconds.
Switch off the flame.
Serve as a tea time snack!!!

NOTES :

1.Never wash poha many times as it turns out soggy and can't be eaten.
2.After washing strain out the water completely from the poha.
3.Adding sugar is optional and in maharashtra sugar is added in traditional poha recipe.
4.Do not use the thin poha to make this recipe, instead pick up thick poha from the market to make kanda poha or batata poha.
